Company Casserole


Company Casserole

1960s Recipe from Sharri Schafer, Ohio Northern University

8 oz. noodles
1 lb. hamburger
1 tbsp. butter
2- 8 oz. cans tomato soup
1 cup dry cottage cheese (or ricotta)
8 oz. cream cheese
¼ thick sour cream
1/3 cup finely chopped green onions
1 tbsp. finely chopped green pepper
2 tbsp. butter melted

1.     Grease 3 qt. casserole.  Preheat oven to 350 degrees
2.     Boil noodles in salted water, 10 minutes, Drain.
3.     Meantime, brown hamburger in 1 tbsp. butter.
4.     Drain.  Stir in tomato sauce.  Remove from heat.
5.     Combine cottage cheese, cream cheese, sour cream, onions, green pepper
6.     Spread ½ noodles in casserole plus a little salt.  Cover with cheese mixture, then cover all remaining noodles.  Salt.
7.     Pour melted butter over noodles.  Pat hamburger & tomato mixture on top.
8.     Bake at 350 degrees for 20-30 minutes.  6 servings
